A healthy, delicious Italian date night dinner. Pair it with a bottle of wine and salad for a complete, healthy dinner.
1 pound skinless, boneless chicken breasts
1/2 cup chopped onion
1 medium green pepper cut into strips
1 16oz. can of whole tomatoes
1 6oz. can of tomato sauce
1/2 teaspoon oregano
1/2 teaspoon basil
1 cup minute rice
In a large saucepan, sauté the chicken, onion, and pepper with cooking spray. Stir in tomatoes, sauce and seasonings. Bring to a boil. Stir in rice and cover. Reduce heat to low and simmer for 10 minutes.
