Pumpkin Cake
Ingredients:
3 cups Bisquick Original baking mix
1 cup sugar
1/2 cup shortening
2/3 cup milk
2 tbsp. grated orange peel
1/4 cup orange juice
4 eggs
1 tub soft whipped cream cheese frosting
1 tsp. sugar
10 large black or red gumdrops
5 green gumdrops
red and yellow food color
1 ice cream cone
Directions:
Heat oven to 350. Grease and flour 12-cup bundt cake pan. Beat baking mix, 1 cup sugar, shortening, milk, orange peel, orange juice, eggs, 12 drops yellow food color, and 8 drops red food color in a large bowl with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat on medium speed for 4 minutes, scraping bowl occasionally. Pour batter into pan.
Bake for about 35 minutes. Cool completely.
Place on cake serving plate. Stir 10 drops each yellow and red food color into frosting. Frost cake.
Sprinkle 1 tsp. sugar on sheet of waxed paper. Place gumdrops about 1/4 inch apart on sugar. Top with another sheet of waxed paper. Roll gumdrops between waxed paper to 1/4-inch thickness. Cut out eye, nose, and mouth from gumdrops. Arrange on cake for a pumpkin face.
Place ice cream cone in center of the hole for a pumpkin stem with green gumdrops around for leaves.
Makes 16 servings.
Witch Cupcakes
Ingredients:
1 1/2 cups Bisquick Original baking mix
1/2 cup sugar
1/2 cup milk or water
2 tbsp. shortening
1 tsp. vanilla
1 egg
1 tub vanilla frosting
Green food color
Assorted candies (black licorice, candy corn, Reece's bites, m&m's)
Black decorating gel icing
Directions:
Heat oven to 375. Line pan with paper baking cups. Beat baking mix, sugar, milk, shortening, vanilla and egg in large bowl with electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on medium speed for 4 minutes, scraping bowl occasionally. Fill baking cups about half full.
Bake 15-20 minutes. Cool completely.
Tint frosting with green food color. Frost cupcakes. Arrange licorice to make black pointed witch hats. Arrange candy corns for nose (pointed portion at top). Arrange Reece's or m&m's for eyes and use black gel icing to make pupils on the eyes.
Pumpkin Faced Pizza Pot Pies
Ingredients:
1 pound ground beef
1 medium onion, chopped (1/2 cup)
1 small green pepper, chopped (1/2 cup)
1 can (8oz) pizza sauce
1 can (4 oz) mushroom pieces
1 cup (4 oz) shredded mozzarella cheese
1 cup Bisquick baking mix
1/4 cup boiling water
Directions:
Heat oven to 375. Grease round 10-12 oz casserole dish. Cook beef, onion, and green pepper in 10-inch skillet over medium heat until beef is browned; drain.
Stir in pizza sauce and mushrooms. Heat to boiling; reduce heat; simmer uncovered for 5 minutes. Spoon into casserole dish and sprinkle 1/4 cup cheese on top.
Mix baking mix & boiling water until you get a soft dough. Beat 20 strokes. Gently roll into baking mix to coat. Shape into a ball. Knead, then divide into four balls. Pat each ball into a small circle, then cut out eyes, nose, and mouth for pumpkin face. Place each circle on the beef mixture in casserole dish.
Bake 15-20 minutes or until crust is a very light brown.
